One of the most popular recipes on my site is a copycat recipe for Starbuck's Strawberry Acai Refresher. Now, I much prefer, the mango dragonfruit, but because I had some passion fruit puree,

I decided to make some cocktails. You can make this into a mocktail by using sparkling white grape juice, or even sparkling water. The first time I made this, I used sparkling water made with my Soda stream.

How to make this sparkling strawberry lemonade

It's really easy, basically, just muddle all of the ingredients together, strain the fruit mixture, and top with something sparkly.

The first thing you have to do is make the lemon simple syrup. The reason we're making a simple syrup is because granulated sugar does not dissolve in cold liquids.

Lemon simple syrup

Using a vegetable peeler, remove the yellow part of the lemon, only. Be sure not to remove the white pith, just the zest.
In a small sauce pan, combine water and sugar. Bring the mixture to a boil, then reduce to a simmer, stirring until all the sugar has been dissolved. Remove from heat.

Add the lemon peels and let the simple syrup cool. Transfer the contents to a glass jar. You can keep the lemon simple syrup in the refrigerator for 2 - 4 weeks.

Extract the juices

In a small bowl, muddle together strawberries, passion fruit puree, lemon juice + zest, and lemon simple syrup. Crushing (or blend) the mixture with a pestle until the juices release. You can use frozen strawberries, just be sure to thaw them, first.

Strain the pulp

Next, place a fine-mesh strainer over a large measuring cup. Slowly pour the strawberry mixture through the strainer, pushing the strawberry mixture, grinding it against the strainer with the back of a spoon. Do this until all of the pulp has been been separated from the juice. Afterward, taste the mixture, and adjust the flavorings as needed.

Pour the sparkling strawberry lemonade into prepared glasses

Finally, prepare the glass with a couple of ice cubes. Pour the strawberry lemonade into each glass-- about 2/3 - 3/4 of the way full. Top with something sparkling, stirring gently to combine. My favorite is sparkling rose' but sparkling water or sparkling white grape juice is a great option for a refreshing non-alcoholic drink.

Lemon sugar

This is optional, but highly recommended. In a shallow bowl, mix together granulated sugar and lemon zest. gently crushing the mixture with your spoon to help release the oils. Wet the rim of the glass by running a lemon wedge around the top. Then, press the glass into the lemon sugar to adhere the sugar to the rim.

  • 2 tablespoons passion fruit puree, plus more to taste
  • 1/4 cup lemon simple syrup, plus more to taste
  • 1 large lemon zest and juice
  • sparkling water, sparkling white grape juice, or champagne for topping.

  • zest of 1 lemon
  • 1 tablespoon granulated sugar

  • 1 cup granulated sugar
  • zest of 1 large lemon, peeled

Notes

You can use a blender to puree the fruit, then strain the mixture into a measuring glass.

Adjust the mixture as needed. It will ultimately depend on your taste buds, the size of your lemon, and the natural sweetness of your strawberries.

You can use frozen strawberries, just thaw before use.
