Add the marshmallows to a large microwave-safe bowl and heat in 30 second intervals, stirring after each one, until completely melted.

Who says crisped rice treats are just for kids? I made these treats with a chocolate-peanut butter topping today – cut small and served on a tray, they would be appropriate for any grown-up gathering.

Ingredients

  • 3 tablespoons butter

  • 1 bag large marshmallows (10 ounces)

  • 1/2 cup peanut butter, plus 1 1/2 tablespoons, divided

  • 6 cups crisped rice cereal

  • 1 1/2 cups chocolate chips

  • 1 1/2 tablespoons peanut butter

Preparation

Lightly grease a 9-inch x 13-inch pan and set aside.

In a large pan, melt the butter over medium heat. Add the marshmallows and stir constantly until melted. Remove from the heat, add the peanut butter and stir well. Add the cereal and stir until well combined. Carefully press into the pan with wax paper or buttered fingers.

Mix together the chocolate chips and 1 1/2 tablespoons peanut butter and melt (easiest in the microwave, stirring every 30 seconds until melted). Spread the chocolate over the crisped rice treats. Let sit until the chocolate is set. Cut and serve.

I know I keep saying each new Rice Krispie Treat recipe is my favorite, but I really think these chocolate peanut butter Rice Krispie Treats are my favorite. (Until the next recipe).

They are so good I want to make a million batches and hand deliver them to all of you.

Think rich, sweet, chocolate with just the right balance of peanut butter in a slightly-dense, chewy cereal treat. And they are easy to make.

We start with the best Rice Krispie Treat recipe, with the perfect proportion of butter, marshmallows, and cereal, and add chocolate and peanut butter.

you will need:

RICE KRISPIES CEREAL 

Use the classic cereal or any store-brand version. 

MARSHMALLOWS 

You will need 10 ounces of marshmallows. Different brands have different densities, so it’s best to use a scale or the weight printed on the bag as a guide, but in general, 10 ounces of marshmallows is 40 regular size OR 6 cups of mini. 

BUTTER

For best results, we recommend using European-style, salted butter. 

CHOCOLATE CHIPS 

Semi-sweet chocolate chips are best to balance the sweetness. 

PEANUT BUTTER

Use your favorite brand of peanut butter. If the oil is separated, make sure the peanut butter is thoroughly mixed before making the treats. 

TOOLS YOU’LL NEED:

  • 8-inch or 9-inch square baking pan
  • cooking spray
  • non-stick foil 

STEP ONE: PREPARATION

Spray a large bowl with cooking spray or rub with butter or Crisco. Add: 4 2/3 cups Rice Krispies cereal. 

Also grease an 8-inch or 9-inch square baking pan or line with non-stick foil and set aside.

STEP TWO: MELT AWAY

In a saucepan, melt 4 tablespoons of salted butter on medium-low heat. Remove from the heat as soon as the butter melts.

Add 1 cup of semi-sweet chocolate chips, 1 cup of peanut butter, and 10 ounces of marshmallows.

Return to the stove-top over medium-low heat, stirring frequently until melted and very smooth.

TIP: Remove the pan from the heat just the before the marshmallows are fully melted and stir, using the residual heat to completely melt the marshmallows. This will prevent you from scorching the chocolate.

STEP THREE: MIX IT UP

Pour the chocolate, peanut butter, marshmallow mixture over the cereal. Stir gently until the mixture is very well combined.

Transfer to the prepared baking pan.

Use a spatula to evenly press the cereal treats into the pan. Let cool completely, about 2 hours.

You may also chill in the refrigerator.

Cut into 16 squares.

how do you keep Rice Krispie Treats from sticking to the pan?

I prefer to use PAM non-stick cooking spray when making Rice Krispie Treats. To make my life much easier and to avoid a sticky mess, I spray:

  • the spatulas I use
  • the large bowl with the Rice Krispies

You may also substitute Crisco or softened butter and spread with a paper towel. 

Spray the baking pan with cooking spray OR, line the baking pan with non-stick foil to easily remove and cut the treats.

  • 10 ounces marshmallows 6 cups mini OR 40 regular
  • 4 2/3 cups Rice Krispies cereal

  • Grease an 8 or 9-inch square baking pan and a large bowl with cooking spray, butter, or Crisco. Add the cereal to the large bowl. Set aside.

  • In a saucepan over medium-low heat, melt the butter.

  • Scrape the mixture over the cereal and fold to combine. Stir very well.
