Wrap foil around the roasting pan. Preheat the oven to 350F and bake the ham for 1 hour. This softens the fat and makes it easier to remove the peel.

Remove the ham from the oven and remove the foil after 1 hour of roasting. Remove the ham’s rind and discard it. I used tongs because the rind will be heated. You can cut some of the fat from the fat cap if desired, but I normally leave the majority of it on the ham.

Cut incisions in a cross check pattern with a sharp knife. Make sure you go deep enough to cut through the fat as well as the meat.

In a blender, I pure the glaze until it is smooth. Then I use a BBQ brush to brush it all over the ham, making sure the glaze gets right into the slits.

I don’t use all of the glaze to coat the ham. Instead, I brush about a third of the glaze on the ham before roasting it. Then I’ll brush additional glaze all over the top of the ham twice more while it’s baking. This results in a lovely caramelized coating all over the ham’s top and sides. The flavor is incredible!

Brush the ham with extra glaze after 1 hour. Brush the ham with glaze once more about 30 minutes later. Cook the ham for another 30 minutes in the oven.

After taking the ham out of the oven, I let it rest for about 5-10 minutes. Then, using a nice long carving knife, carve the ham into 1/4-inch thick slices. My ham is best served with dijon or creole mustard. Amazing! As you can see, cooking a picnic ham is quite simple.

Ham is best served with sides that complement the ham’s smokey, sweet flavor.
