Está bien con o sin el "it". A mí personalmente me suena más natural si se incluye, y creo que casi siempre lo diría así. Pero soy británico y quizás no sea igual para un estadounidense (a ver qué dicen).

Yes, I'd say so. It sounds better with 'it'.

You can also say 'what's the day today?'

También: What's today's date?
What's the date today?
What day is today?
What day is it?
It is _________ (day of the week), right?
Isn't it ____________________ (day of the week)?

You can also say 'what's the date?' but I think it refers to the date in numbers not to a day of the week..
