Instant Pot Smothered Pork Chops and Little Potatoes

Instant Pot Smothered Pork Chops and potatoes is a whole meal made all in one pot. The gravy is thick, creamy and is delicious on the pork chops.

Preparation

Step 1 out of 13

Slice Little potatoes in half and dice onion.

Place Little potatoes and diced onion into a steamer basket.

Season potatoes and onions with salt, pepper, garlic powder and gently toss to coat evenly.

In the insert of a six-quart Instant Pot, stir together beef broth, cream of mushroom soup, dry onion soup mix, and steak sauce.

Season both sides of the pork chops with garlic powder and black pepper.

Place pork chops into the gravy mixture (doing your best to make sure they get coated with the gravy).

Place steamer basket on top of pork chops.

Put the lid on the Instant Pot and set the pressure release valve to 'Sealing'.

Set on high pressure for eight minutes. When finished, do a quick pressure release.

Remove steamer basket and set aside. Then remove pork chops and set aside.

Turn the Instant Pot to the sauté setting. Stir in sour cream (if using).

Stir together water and cornstarch in a small bowl and add to gravy. Whisk the mixture and allow to come to a gentle boil until gravy thickens.

Why are my Instant Pot pork chops tough?

When you do a quick release of pressure in your Instant Pot sometimes it can make your pork chops or any meat tough. We like to do a natural release for most of our Instant Pot recipes. Sometimes we will do a 10 minute natural release and then a quick release of the remaining pressure. This will help keep your pork chops or any meat tender.

How long does it take to cook pork in the Instant Pot?

The Instant Pot cook guide states 15 minutes per pound of pork. We like to cook our pork extra long with a natural release so it is fall apart tender and has absorbed all the extra flavors. You should always check your pork with a digital meat thermometer to make sure that it has reached the required internal temperature before eating. We use one like this.

1 Cup Chicken Broth

1 ½ – 2 lbs. Boneless Pork Chops

1 Packet Dry Ranch Dressing Seasoning Mix

1 Tbsp Cajun Seasoning (or seasoning of your choice)

a couple of small red potatoes

1 Can Cream of Chicken Soup

Instructions – Instant Pot Ranch Pork Chops and Potatoes

#1. First, pour 1 cup of chicken broth into your Instant Pot with your pork chops.

#2. Next add your Cajun Seasoning (or seasoning of choice) to the tops of your pork chops.

#3. Then sprinkle your packet of Ranch dressing mix evenly on top of your pork chops.

#4. Next, Place your potatoes on top.

#5. Close the lid and turn the steam release valve to the “sealing” position.

#6. Next, press the pressure cook button. Then press the pressure level button until high pressure is selected. Set timer for 30 minutes if you have 2 lbs of pork chops. We use the Instant Pot cook guide that states 15 minutes per lb. of pork.

#7. After the timer has completed allow your Instant Pot to naturally release the pressure. This should take about 20 minutes.

#8. Take you pork chops and potatoes out of your Instant Pot and place them under some foil to keep warm.

#9. Turn your Instant Pot on “Saute” mode. Add your 1 can of cream of chicken soup and stir with the liquid that is in your pot to make a creamy gravy. If the gravy is not thick enough you can also add a corn starch slurry while stirring on “Saute” mode.

#10. Finally, serve your Instant Pot ranch pork chops and potatoes topped with your delicious gravy!
